Homemade Spaghetti (and Linguine)


Is this the most loved noodle on earth? It could very well be. Kids love to slurp it, adults are comforted by it, and Disney has made our heart throb with it. The most simple noodle on earth may also be the easiest to make!

⸙ 1 LB. of Flour

⸙ 4 Large Eggs

⸙ 1 Yolk

⸙ 1/4th a Cup of EVOO

⸙ 1 Teaspoon Sea Salt

⸙ 1/4th Cup of Water

⸙ Plastic Wrap

⸙ Extra Sea Salt

⸙ Extra Water

⸙ Pasta Machine (HomeGoods sells them and they’re really not that expensive)


⸙ Make a giant pile of flour on a clean counter top. 

⸙ Make a good size hole in the center of the pile. Make sure there are no holes in your circle for the liquids to leak out of.

⸙ In the center of the flour, place the eggs, yolk, EVOO, salt, and water.

⸙ With a fork or a small whisk, gently whisk it all together.

⸙ Slowly start to incorporate the flour into the liquid mixture. Go in slow circles. Be patient, it will take a while. You will see the dough come together and its quite a beautiful process. It will get thicker and drier as you incorporate more flour.

⸙ Once the flour is all incorporated, you’re going to knead the dough. Get your body weight into it. Really push it into the counter. Roll and Push. That is what I do. When it gets too sticky, I wet my hands and get back to kneading. Adding more water will make the dough smoother and silkier. 

⸙ Once it is kneaded well, wrap it in plastic wrap and set aside for a minimum of an hour. 

⸙ Unwrap the plastic, split the dough into 8 sections. This will make it extremely easy and quick to deal with. 

⸙ Make sure your pasta maker is secure to the counter at this point.

⸙ Take one of the pieces of dough and roll out it, so that its even. Longer thinner pieces are better than wider pieces for the machine.

⸙ When it is rolled out, make sure the machine is at settings # 1. 

⸙ Roll it through at the setting twice.

⸙ Change the setting to two. Process the dough through twice. 

⸙ Keep doing this through setting 5. They have 8-10 settings, but 10 is more for angel hair. 5 works great for spaghetti and linguine. 

⸙ When you’re doing processing it through level 5, take the beautiful silky thin dough and process it through the spaghetti setting on your machine. Literally, it is as easy as that. Pasta looks hard to make, but it isn’t. Its just tie consuming. It actually relaxes me though. 

⸙ Lay out the noodles until you are ready to cook them. 

⸙ Bring a pot of water to a boil with salt. 

⸙ Add in a handful of noodles at a time. When they rise to the top, they are done. For fresh pasta, it should only take a couple minutes. The salt will help the noodles from sticking together or to the bottom of the pot, so add more salt as you go.
