How could anyone not love tomatillos? They’re a fun, yet not a wildly drastic change than the much loved vine tomato. Its a safe transition so to say. They are a bit firmer than the typically known tomato. They are a bit more fruity and tarte as well. I had to accompany them with other delicious flavors of Mexico like jalapenos, avocado, cumin and cilantro! Disfrute de su Comdia!
SPICY TOMATILLO SCRAMBLER

❁ 5 Large Eggs
❁ 2 Medium Tomatillos
❁ 1 Medium Hass Avocado
❁ 1/4 Cup Diced Onion
❁ 1 Jalapeno Pepper
❁ Black Pepper
❁ Scramble the eggs over medium heat in a large skillet.
❁ As those are cooking up, diced the onion, avocado, jalapeno, and tomatillos into bite size pieces.
❁ Once the eggs are mostly cooked, place the diced veggies in the skillet with the eggs.
❁ Let it cook down for a few minutes.
❁ Lower the heat to low.
❁ Add the black pepper, cumin and cilantro to your liking. Mix well.
❁ Let it cook through on low for a couple minutes.
❁ Now, you can divvy up into 5 containers for your breakfast!
