Talk about a good dose of fiber and low sodium! This is the perfect combination of favors. I am new to lentils, but I am loving them already. Why aren’t they more popular? This lentil dish will fill you up for hours. Its the perfect comforting snack or side dish. Earthy Lentils are brown rice are brightened up with a citrus vinaigrette. LENTILS & LEMON VINAIGRETTE

🍋 2 Cups Brown Rice (Dry)
🍋 1 Cup Lentils (Dry)
🍋 1 Red Bell Pepper
🍋 1/2 Cup Lemon Juice
🍋 1 Tsp Honey
🍋 1 Tsp EVOO
🍋 1 Tsp Dijon Mustard
🍋 Black Pepper
🍋 Cook up the rice in a mixture of lemon juice and a hint of lime juice. You don’t have to, but this will give just a little kick to your rice.
🍋 While the rice is cooking up, chop the red pepper into bite size pieces and measure out the 1 cup of lentils.
🍋 Place the red pepper in a large bowl and set aside.
🍋 In a small bowl whisk together the lemon juice, dijon mustard, honey, and EVOO.
🍋 Add in black pepper and cilantro to the lemon mixture and whisk well. That’s your Lemon Vinaigrette! So easy, right? And you can use it on salads, chicken, or whatever else you’d like.
🍋 When the brown rice is done, add the brown rice to the bowl with the red pepper.
🍋 Now in the same pot, add more water and cook up the cup of lentils.
🍋 As soon as those are done, drain them, rinse them and add to the bowl with the rice and red pepper.
🍋 Mix together well.
🍋 Pour the vinaigrette over the rice mixture and mix really well.
🍋 Store for the week and you’re all set! It’s so easy and not very involved at all! Hassle free is the way to be sometimes.
