TACO STUFFED BAKED POTATOES (TACOTATOES)

What is better than a healthy taco? Imagine a taco with all the fixings, but that isn’t overwhelming in calories. Now, imagine a bakqed potato. You know how that perfect potato is stuffed with butter, cheese, bacon and the works? Well, combine the two. Take a baked potato and add all the delicious taco flavors!

TACO STUFFED BAKED POTATOES (TACOTATOES)

INGREDIENTS:

❀ 4 Baking Potatoes

❀ 1 Tablespoon EVOO

❀ Sea Salt

❀ 2 Tablespoon Butter

❀ 1 lb. Ground Beef

❀ Cumin, Garlic Powder, Black Pepper, and Cayenne

❀ Half a pint of Grape Tomatoes

❀ 1 Avocado

❀ 2 Jalapenos

❀ 1/2 Cup of Cheese (I used Cheddar, but feel free to use whatever you’d like)

❀ 1 container of Sour Cream

❀ 3 Tablespoons Lime Juice

❀ 2 Tablespoons Shallots (from Home Goods)

❀ 2 Tablespoons Citrus Ginger (from Home Goods)

❀ Black Pepper


Side Note: You are more than welcome to just use sour cream by itself or put your own herbs and spices in the sour cream to make it your own. Don’t feel like if you don’t have every ingredient, you can’t make this dish.

Don’t get overwhelmed by the amount of ingredients. Most of it is raw veggies that you only need to chop. They’re also very inexpensive. You could easily buy this all for less than $25.00.

DIRECTIONS:

❀ Preheat the oven to 400 degrees.

❀ Take a fork and stab the potatoes 8 or so times around each potato. This will allow it to cook more evenly and refrain from becoming hard.

❀ After placing the potatoes on a foiled cookie sheet, pour 1 tablespoon of EVOO over the potatoes and rub around. Sprinkle the potatoes with sea salt.

❀ Place in the oven and set times for 60 minutes. After an hour is up, you will check on it with a fork seeing if its as soft as you’d like. If it is not, put it in for 15-30 more minutes.

❀ In a pan, cook up the ground beef on medium heat with cumin, garlic powder, black pepper, and cayenne powder. 

❀ While the potatoes is cooking, dice the jalapenos, tomatoes, and avocado and place into their own bowls. This way you can go down the line, like a buffet and stuff your potatoes! 🙂 I put them in containers with lids, that way if I don’t use them all, I can save it for another time or a different dish.

❀ Shred and measure out the cheese and place that in a bowl as well.

❀ In a separate bowl, mix together the sour cream, lime juice, herbs and black pepper. You won’t use it all, so keep it in a bowl for other meals! 

❀ When the potatoes are done, slice them open and place half a tablespoon of butter in each one. 

❀ Start loading all the goodies in your potato! I start with ground beef, then the tomatoes, avocado, jalapenos. I topped it with cheese and sour cream! 

❀ All done. Chow down! Its SO filling. You’re going to fall in love.
