Tangy Smashed Potatoes

Potatoes are more versatile than one out think. Most people bake them or mash them, but there are so many more things you can do with them. You can crisp them up, make patties, make pasta, or load them with all kinds of different flavors to keep it fresh! I love baked potatoes with different toppings. We all know the standard butter and sour cream, which has its special place in all our hearts I am sure. Here though I wanted to do a little something different. Delicious soft potatoes crisped up on the outside with a tangy sour cream sauce topped with bacon. Its bacon, people. You can’t go wrong! Its always nice to know too that you don’t always have to stick to raw veggies to stay healthy. Indulge a little! One serving is only 79 calories and its the perfect side!

TANGY SMASHED POTATOES

Servings: 10 | Serving Size: 1/2 Potato | Calories per Servings: 79

INGREDIENTS:

🐖 5 Medium Gold Potatoes

🐖 1/2 Cup Low Fat Sour Cream

🐖 1 Tablespoon Mustard

🐖 1 Tablespoon Vinegar

🐖 1/4 Cup Shallots (I used dry shallots, which I got from Home Goods)

🐖 3 Slices Bacon

DIRECTIONS:

🐖 Wipe off your potatoes with a wet paper towel while you let a pot of water boil up on the stove.

🐖 Place the potatoes in the boiling water.

🐖 While those are cooking, make you bacon. You can do this however you prefer. I prefer mine crispy, so I enjoy frying them on the stove, but I know some people love baking them as well.

🐖 When the bacon is done, set aside on a paper towel to let them cool.

🐖 In a small container with a lid, combine the sour cream, mustard, vinegar and shallots. Mix well and set aside.

🐖 When the potatoes are cooked through all the way, take out and let them cool. You can tell the potatoes are done if you take a fork, stab the potato and the fork easily slips out of the potato.

🐖 Cut the potatoes in half.

🐖 Heat up a skillet to medium heat and cook the potatoes on each side.

🐖 When the potatoes are in the skillet, smash the potatoes slowly and lightly with the spatula.

🐖 Line each potato where the inside of the potato is facing up.

🐖 Place half a tablespoon of the sour cream mixture on top of each potato.

🐖 Crumble the bacon with your fingers and sprinkle atop all the potatoes.

🐖 Done and now you have a delicious side for the week or for a gathering!
