BLTE: Bacon, Lettuce, Tomato & Egg

Bacon. Lettuce. Tomato. Egg? That’s right. I wanted to do something tasty, healthy, and comforting for breakfast this week. I LOVE BLTs. Who doesn’t? Its a classic food, but I wanted to avoid the bread this week (trust me, I love carbs). I added an egg and still kept the mayo, but added some more flavors to add to this delicious classic! You can totally add avocado too, but I wanted to keep this as simple as possible. You can eat this for breakfast, lunch or even a good snack! I hope you enjoy this take on a cult favorite.

Servings: 5 | Serving Size: 1 Lettuce Wrap | Calories per Serving: 178

INGREDIENTS:

🍅 5 Slices of Bacon

🍅 1 Head of Lettuce

🍅 5 Roma Tomatoes

🍅 5 Eggs

🍅 2.5 Tablespoons of Light Mayonnaise

🍅 2.5 Teaspoons Lemon Juice

🍅 2 Teaspoons Hot Sauce (I used Frank’s.)

🍅 Black Pepper

🍅 Paprika

🍅 Chives

DIRECTIONS:

🍅 In a pot, add the eggs to boiling water. Cook for 10 minutes.

🍅 While the eggs are boiling, cook up your bacon how you like. I get mine super crispy by pan frying them at medium high heat. I cook them twice on each side.

🍅 While the bacon and eggs are cooking, slice 1 roma tomato.

🍅 In a bowl, mix together the mayo, lemon juice, and hot sauce.

🍅 Sprinkle in some black pepper and paprika into the bowl and mix well.

🍅 When the bacon is done, place on a paper towel to make sure the grease comes off and keeps the bacon crispy.

🍅 Remove the eggs and place under cold water.

🍅 When the eggs are ready, take one and peel the shell off.

🍅 Slice the egg how you like.

🍅 Now take a large piece of lettuce from the lettuce head.

🍅 Take half a tablespoon of the mayo mixture and spread on the lettuce carefully not to rip the lettuce.

🍅 Place the slices of roma tomato down, then the egg on top.

🍅 Place one piece of bacon in the lettuce wrap as well.

🍅 Now sprinkle with black pepper, paprika and chives.

🍅 If you are making this for the whole week, store your bacon in an airtight container. I promise, they will stay crispy all week as long as you cooked them super crispy and placed on a paper towel. Store the extra eggs and mayo as well. You can make one every night when you get home from work or in the morning.
