Spicy Zucchini & Lentils

You could say I’ve have a recent obsession with lentils lately. I’ve been trying to incorporate them into more and more dishes. I like that earthy taste and the fact that they have a nice bite to them. Plus, they mend well with any dish. Here I combined them with a few of my favorite veggies: zucchini, jalapenos and onion. If you like BOLD flavors, but a very healthy and nutritious side dish, then this is for you!

Spicy Zucchini & Lentils

Servings: 12 | Servings Size: 1/2 a Cup | Calories per Serving: 19

INGREDIENTS:

🌾 6 Zucchini

🌾 1 Cup of Lentils

🌾 1/2 Cup Diced Onion (I used frozen just because its quicker.)

🌾 2 Jalapenos

🌾 2  Garlic Cloves

🌾 1/2 Cup Lemon Juice

🌾 1 Cup Water

🌾 Black Pepper, Cayenne Powder, Chili Pepper, Cumin, and Paprika

DIRECTIONS:

🌾 In a skillet set to medium heat, add the lemon juice and water. Let it heat through.

🌾 Add the lentils to the skillet.

🌾 While the lentils heat up, chop the zucchini into half moon pieces.

🌾 Also, finely chop the jalapenos and garlic cloves and measure out the onion.

🌾 Once the lentils are almost done cooking, add the zucchini, jalapenos, garlic and onion.  Cook down for a few minutes.

🌾 Add the black pepper, cayenne, chili powder, cumin and paprika to your likely. I like to generously spice my food. Mix well.

🌾 Let that cook down for another couple of minutes.
