If you cannot tell from my blog, I am a huge fan of breakfast. I love cooking it, eating it and coming up with new creative ideas for it! We a1ll know avocado toast. I love it, but I wanted to do just a little different take. Add a bagel, some tart lemon juice, and just a hint of spice with banana peppers and you’ve got the recipe below. I hope you enjoy this tasty, easy, quick, and healthy recipe!

šŸ³ 1 Bagel Thins

šŸ³ 1/2 Avocado

šŸ³ 1 Tablespoon Lemon Juice

šŸ³ Garlic Salt

šŸ³ 1 Roma Tomato

šŸ³ 1 Egg

šŸ³ 6 Banana Pepper Rings

šŸ³ Black Pepper and Chives


šŸ³ Start by boiling the eggs. Even though the recipe calls for one, boil 5 for the week or even 10 to have handy! Hard boiled eggs are so versatile and handy to have in your fridge.

šŸ³ In a bowl, mix together the avocado, lemon juice and garlic salt well.

šŸ³ Slice the roma tomato in half. Slice one half into 3 slices and then cut each of those slices in half. Save the other half of the tomato for the next day.

šŸ³ Chop the banana peppers.

šŸ³ When the eggs are ready, peel one egg and slice it.

šŸ³ On the bagel, evenly place the avocado mixture down first on both sides.

šŸ³ Then place the tomato slices and eggs on top.

šŸ³ Sprinkle on the banana peppers.

šŸ³ Top off with black pepper and chives.

šŸ³ Easy, no hassle, delicious and nutritious!
