Burrito Bowls. Who isn’t infatuated with these? Cook it in a crockpot and you have a no hassle, healthy, flavorful dish! I adore burrito bowls. Its the comfort of a burrito, but without the guilt. Burritos themselves really can be quite nutritious, but its usually that tortilla that can kill your diet adding up a ton of calories! (My favorite tortilla is from Pancheros and its a whopping 500 calories for just the tortilla! But man… its so good!) I love a good burrito bowl. They’re easy to make and have an abundance of veggies with help with all that wonderful nutrition our bodies need. You can add cheese, avocado, and/or sour cream if you want to as well, but you by no mean have to in order to enjoy this dish! Lets face it though, everything is better with all of those ingredients. 😜
CHICKEN BURRITO BOWL (CORCKPOT)
Servings: 12 | Serving Size: 1/2 Cup | Calories per Serving: 97
🌯 7 Ounces of Chicken Breast
🌯 1 Cup Brown Rice
🌯 1 Can Black Beans
🌯 5 Roma Tomatoes
🌯 1 Cup Corn
🌯 1 Cup Pepper and Onion Blend (Frozen section)
🌯 2 Jalapeno Peppers
🌯 1/2 Cup Lime Juice
🌯 3 Cups Water
🌯 Garlic Powder, Cumin, Chili Powder, Cayenne Powder, and Black Pepper
🌯 Slice the roma tomatoes and jalapenos into bite size pieces.
🌯 Empty those, the remaining veggies, the rice and beans into the crockpot.
🌯 Place the chicken into the crockpot whole. You will shred is with two forks later after its done cooking.
🌯 Pour the lime juice and water into the crockpot.
🌯 Sprinkle in the spices to your liking. I spice mine up pretty heavily.
🌯 Mix well.
🌯 Cook on low for 8 hours, then unblock and take the top off the crockpot to cool quicker.
🌯 With two forks shred the chicken breast.
🌯 Serve and eat your heart away! Top with some avocado or sour cream! (With 1/4th an avocado on top its 160 per serving!)
